Good call on the fats. I always have peanut oil, high quality olive oil (california olive ranch robust), and some kerrygold butter. The more fats and vinegars the better IMHO.

Tamari, Chili Garlic Paste (not sriracha), white pepper, fresh meyer lemons(we have a tree!), Mirin, Rice Vinegar are some of my staples as a just in case. I always have maldon salt and black pepper handy as well. I will say, peanut butter comes in handy more than you would think too.

All of those things +Aleppo Pepper (once you use it it will never leave your kitchen), celery seed, whole coriander, smoked paprika, Maldon Salt, whole fennel seed, mustard seeds of various color, and I would argue that good cocoa powder is a spice as I use it in a bunch of rubs for chicken.
