I do the same thing but skip the vanilla part. Vodka and gin both work well if the rum runs out, but I recommend steeping olives and drinking the pure olive extract after shaking with ice. Tequila works in a pinch too, but leave out the olives and vanilla - maybe just a little lime. Damn I love cooking. :)
