I wouldn't say he's a technophobe. He uses lots of technology in his films, he just doesn't default to it. Much like people who feel that records deliver a richer, more authentic sound, he prefers physical film as his medium. And based on revenue from his films, studios don't mind one bit.
For Nolan I think this is more about influencing the film industry overall. While, yes, it does impact theaters and theater owners, he's spreading his "pro film" message.
Of course it doesn't require it. There are other shortcuts as well (dehydrated rather than fresh food, etc). Much ado has been made about expensive camping gear, but it's just one option.
I find blind brand loyalty to be really strange. There are lots of great, high quality Android phones and there have been many great iPhones.
