everyone already knows not to crack the egg on the edge of the bowl. crack it on a flat surface OR on the inside of the bowl and tap a few times around the perimeter and you'll get a perfectly halved shell and only yolk and white in your omelet.

cast iron pan. not sure if it's the 9 or the 12 inch I prefer more. probably the big'un. you can cook anything in it and cook it in anything. i've had mine on just about every heating appliance I own (stove, oven, grill, etc) and it makes a mean seared steak with bonus deglazed deliciousness.
