Haha we are dominated by Tim Hortons's, but my friends and I started a small batch, third wave coffee roastery in Buffalo, NY. There is a burgeoning scene in Rochester as well with a few roasters doing great stuff as well, but nowhere on the level of Horton's or anything like that!

Buffalo! Although I did just spend my Saturday in Rochester visiting all the new third wave coffee shops and roasteries, including Joe Bean.

Blending has been very kind to us. Our signature coffee is a blend of primarily Central African beans that we call Revolution (we have socialist-inspired branding). We've only worked with two blends thus far because we really love single-origins and the natural flavors that can be brought out, but we're hoping to have

Yep, we are in Buffalo. We've been roasting since last February, selling at farmers markets since November and we're aiming to open our commercial roastery/coffee shop this November.

More often than not, I've found that to be the case, too. Starbucks produces so much coffee that all of their coffees are a blend of beans and they over roast to create a roast-y consistency to the flavor. Over roasting creates that bitterness, though. Cream and sugar definitely help the taste in those cases.

That's a shame, I'm sorry to hear that. That must have been very difficult. My partners and I are only a little over a year and a half into roasting but I love the process so much. We just roasted some beans from a Nicaraguan farmer that we were introduced to by a mutual friend and we're going to drink it with him
