The food he listed MIGHT reach 2k calories. Most people would lose weight on what he just listed for his food barring a bunch of high caloric drinks.

It isn't really a mystery. There isn't a special diet. Take in less calories than you burn. Lose weight. Take in more calories than you burn. Gain weight. The end.

Institutions don't make decisions. The people running those institutions make those decisions.
