Yeah, it seems that the Elsie storyline, such as it was, was completely redundant of Theresa's. They were both close to Bernard and betrayed by his true nature. Not sure why they even bothered with Elsie, really.
To be fair, it seems that the extent of the hosts' sentience has been actively covered up, mostly by Ford. But I can't exactly blame the hosts for being unimpressed with that distinction.
We can also continue to see Wright through visions/memories of Arnold, if nothing else.

One theory is that Dolores' scenes since then are a mix of present and past. As in this episode, when she encounters the church steeple through a mix of the "present" and memories (including memories with William).

I think a lot of us have, which why William is the audience surrogate in so many ways. Who hasn't dreamed of going to Hogwarts or becoming a Jedi? It's interesting that a human wants to escape reality and live in Westworld, while Dolores and Maeve dream of just the opposite.

Well, sure – he's never actually been there. I just mean that he isn't freaked out by modern knowledge or technology like the hosts in the park itself seem to be.
Eh, the pilot was pretty deliberately vague about that, so I wouldn't feel bad. Until the entrance of William and Logan in episode 2 it wasn't clear that actual humans were entering the park in their own bodies.
We have, actually, very subtly. In the most recent episode, the camera pans right past the part of the wall where the "hidden" door should be. It doesn't appear on camera until Theresa points it out.
Possible, but others have mentioned Arnold as well, at least obliquely. In particular, Logan mentioned a mysterious co-creator, but his firm couldn't find out his name or even a picture.
