I have been playing through the story with two friends who also have full time jobs and families. We got the game at launch but just hit level 30 and haven’t finished the main story missions, much less the strongholds or anything else. I think we still have 3-4 missions..

I see what you are talking about, but I also noticed that he’s got a sprint function as well as a force dash but the demo player didn’t use them often, probably because he was coached to show the gameplay in a semi cinematic manner.
