There is an Indian resto in Portland called Bollywood Theater. They do a fried okra that is sliced thinly, IIRC. Delicious! I would never try to replicate it at home, unless I got an airfryer. 

All the air fryers I’ve seen have baskets too small to accommodate a slice.

Boiled and mashed spuds in bread dough is a thing, so instant is a good cheat. 

I got dollar store instant spuds after a tooth extraction and it was fine.
