Haven’t seen the new one but the 90 movie struck the great middle ground btwn the comic’s tone and the OG animated series’ tone.

Additionally it makes the tension in those fights greater.

Sabine also has Mandalorian fight training and tech which gives her an edge over non force users. We’ve seen many times where Jedi have fallen (see clone wars and Grievious) by someone whose highly trained in combat.
