They could have had it both ways. Ariel sees them with the cartoonish expressions because she can talk to them while the humans sees them as normal looking animals that squawk etc.

This is how you end a legacy sequel story. Yeah somtimes a character dying works, but in the end it’s great to see them have one last happy ending.
