The trouble is, pilots train in how to defeat missiles. They also equip jamming pods, chaff and flares, and other technologies intended to defeat missiles, both air-to-air and surface-to-air.

I bet it would be great for that, as well as for air superiority!

That estimate applies only to the frontal aspect...It’s not as stealthy when seen from below (SAMs), above (enemy CAPs), the side, or behind. It’s also probably overly optimistic; Boeing has since backed off that claim a bit. Maximum stealth isn’t the reason you’d get a Silent Eagle.
