Most of a game's budget is spent on art. To remake/touch up every texture, and code new effects/lighting/etc.. for a 50 hour RPG is a huge challenge.

But so many aspects of MMOs wouldn't work. How would you 'tag' kills, especially with ranged combat/combo-kills? How would recruits work? Would you have the same character in all the periods, or one for each? What about clipping issues- what if someone throws you off while you're climbing the highest building? …
EA games have been on Mac for a while. I'm pretty sure you can play both Dragon Age games on Mac for example, and The Sims of course.
I don't think Ubisoft would risk a full-on MMO for Assassin's Creed.
