I would do this if my wife would let me. We drive I40 from TX to CA and back twice a year. I40 is completely empty, minus a few small cities. No reason you couldn't go 85+, the speed limit is already 75. 100 would probably be safe.

Minivans are not cheap - and the sliding doors are stupid. Does any other model of cars have sliding doors? No? Then why does a minivan need them? CUVs have normal doors for normal people, and they have the same room as a minivan for slightly more money.
