I use plain Greek yogurt as a buttermilk substitute for this exact reason. Just mix about 2-4 tablespoons of yogurt with a cup of water. It tastes exactly the same in things like biscuits or batters.

You don't really have to commit. You can cancel at any time, even immediately after the first shipment. Plus they always give you at least 3 days notice to cancel an upcoming delivery. I always over estimate the time frame. If I need it faster I just go back and shorten the interval or increase the quantity.
