Disagree.  I’ve been to food halls all over, including the one in Lisbon featured in the picture, and they are hardly “sanitized” versions of anything.  They serve good local food.  I’m sure there are some misses, but for the most part, it’s a great opportunity to try several local dishes in one place. 

At one time gasoline was delivered by horse drawn wagon from the rail station to the hardware store, where the car owner could pick it up. It took a long time for a new-fangled filling station to open.
