Chili cheese fritos!

Big fan of the masa method...but what about white chicken chili? Seems like every bowl of it I’ve ever seen or had was more of a...seasoned chicken soup with beans than chili. 

I haven’t done the instant potato flakes but I’ve heard they work well for this kind of thing, and while Doritos would work I think it’s more ‘traditional’ to use Fritos
