If you're ever on St Croix, the Cruzan rum distillery tour is definitely worth doing. The cooking is done in open-air vats (apparently they find lots of sunglasses in there), and they cool it by running it down an outdoor sluice. And at the end of the tour they give you a lot of rum drinks.
