There is an amazing Paleo (judge me) Cauliflower Bacon Soup that has, like, 5 ingredients and it’s absolutely incredible. Doesn’t use dairy, but chicken stock and coconut milk and bacon fat certainly work in its place.

Any soup recipe that uses water instead of stock is set up to disappoint you. Try stock instead, and only use enough to keep the veg covered before you blend, i’ll bet it’s much more edible.
