"Sugar is one of the easier ingredients to substitute" because according to the first two sections, its easy to replace wholesome milk and butter with reduced fat milk and apple sauce which both have added sugar. Whole fats are good for you. Added sugar and "sweeteners" that contain chemicals are not.
