I tend to cook thicker cuts with low heat and the lid on (to trap the heat) during the early phases and as it gets closer to done, increase the heat and remove the lid. The lower heat keeps the outside from burning and the trapped heat helps get the middle done sooner.

It's not that they WON'T give it back....it's that they take their time to make you stay longer. Similar to the item in the article (source article) that talks about giving them your keys if you are trading in a vehicle. If they have something of yours, you are more at their mercy.

Bring copies of your relevant documents. Never give them your license (etc.). They'll hold them just to keep you there. If you bring them a copy, they have no reason to hold yours.
