I am going to try to recreate my favorite sandwich from a shop near me. As it is mostly sautéed veggies with goat cheese on a pita, I think this should be easy-ish. I also have two spaghetti squashes waiting for the weather to get slightly cooler so I'm ready to turn on the oven.
