Beef Wellington for sure. cooking the beef sous vide would solve the main problem of keeping the roast medium rare and yet cooking the crust completely.

This is great news. I used to read (and even paid a subscription for) Hell For Leather. Motorcycle writing on the web has been dreary, to say the least, since HFL has gone away.
