Any game engine could be used to make any game. An engine is mostly how software handles asset rendering and code, not gameplay. Gameplay and mechanics all boil down to code and how it’s used.

I am in this exact boat - I just bought Stardew Valley over the weekend and am LOVING it. Such a great game and just a dream to play on the my switch.
