But really, I don't see how swinging your arm with a Move controller is any more immersive than me going to the hardware store and buying a pickaxe to swing around

How about this: I go buy a move controller for my Kinect version and hold that in my hand while I play. Or why not just grab my TV remote and hold that in my hand. Super realistic pickaxe action!
