Works the same way sweat cools your body by evaporating off your body and making you feel cool. Wind evaporates the sweat, and pulls heat away from your body. This sounds very similar in practice.

I've always done the 1 flip and my burgers are awesome. I wonder if the meat will loose additional moisture/fat/juices with multiple flips compared to just one. Didn't read the whole thing, just the summary.

I used to drink coffee all the time at work. Then I started to cut back on my caffeine intake by drinking tea with low caffeine instead of coffee. Now I have tea almost every day where I have coffee maybe twice a week. Used to be the other way around.
