I have been using up a couple of big cans of chickpeas in the cupboard.First one was simmered in bbq sauce in the slow cooker and the other one I tossed in olive oil, baked them dry, and dusted them with a little bbq seasoning/dry rub type thing. Those were a great snack.

I use a Y-peeler, separate the long part and the bulbous part, and then cube it up for roasting. Works pretty well.

In our house, it is called "Those Darn Zombies".
