No, I always say what I mean. I even said it was poached in my original comment. Yes, you will benefit from using an immersion circulator, but it’s not necessary. Warm water baths are normally only used for sous vide (and the only reason I mentioned it), and not poaching.

I know the difference, but without the use of a sous vide water bath it is extremely difficult to poach at such a low temp for that long amount of time. It’s necessary to the recipe just as it is to many of the others listed here.

Would it be sous vide if you put the oil and egg yolks in a plastic vacuum sealed bag? #pedantic

I’m going to have to give your scrambled eggs a try. I will be using a “poor man’s sous vide” (big pot on the smallest burner, on low, with a thermometer), so anything over 30-35 mins is too much work.

Instead of a bag of ice, just take some canned air and blast the thermostat with the can turned upside down. That should do the trick.

I only have the THX remastered version of the trilogy on VHS. It’s pretty close to the original in content, but the image quality is lacking. I’d still rather watch the low resolution version, rather than buy any of the DVD’s or Blu-Rays with the added special effects.
