I wasn't even addressing the "proper" way to make a graph. I was pointing out that it's very explicitly explained that GI decreases along the X axis. That's exactly what I said in my first reply.

I can't help but laugh at you for both acting like an ass AND being wrong. "GI decreases on the X axis", i.e., "foods with a high GI" are on the left. A candy bar is on the left. An orange is not on the left. A candy bar is high GI. An orange is not high GI. Make sense yet?

Saying calories don't matter is as foolish as saying calories are all that matter. Macronutrients, satiety, GI, GL, etc. all matter, of course, and calories are not exact, but they are decent to get an idea of how much you're eating. Then you can get to the more important "why".

Refined or not, they hardly qualify as nutritious. Convenience? Check. Pervasiveness? Check. Antinutrients and toxins? Check. Nutrients that can't be acquired more easily (no need to sprout or ferment) and in greater quantities elsewhere? Nope.

Exactly why it's important to differentiate between actual needs and addictions.

Why not just cut out grains completely?

Buy cows by the quarter, sign up for a local CSA, and learn to can = I spend LESS now than I did when I ate processed crap. It is possible!
