Unclear.  There are definitely clips from talk shows where he says she's from Spain before mimicking her accent.

Sorry, I haven’t been following this as closely as a I “should have”:Do we know if Alec Baldwin has always known she’s not really from Spain?

Out of everything I've read, this explanation makes the most sense and the most plausible. 

She seems to want to be ‘exotic’ by just painting a very broad ‘Spanish’ brush being ‘from anywhere that speaks Spanish’ and not just claiming to be European. 

I totally believe this. She has always given me the impression of being an attention seeking poser, and I’m not referring to her yoga skills.

Alec “my wife is from Spain” Baldwin is just going through the stages of acceptance of the last 8 years of his life.

The really troubling thing is that, while claiming to be Spanish, she herself would seemingly mix up Spanish culture with Mexican and Central American cultures repeatedly. And her strange Instagram posts about her shock that her children all had blue eyes instead of looking “Latino”? What does she even mean? Blue eyes…

I never saw the show so didn’t know Salma was on it and caught his fancy.  It makes the entire story more pathetic, and more obvious.

The most delectable tidbit going around is that Alec Baldwin wanted to date Salma Hayek when she played his girlfriend on 30 Rock, she turned him down, and Hilaria somehow knew this so she faked the Spanish persona and had a restaurant owner friend arrange a “meet cute” at a restaurant Alec and Hilaria both frequented.
