You know the struggle. *hi5* There'll be times when I have to specifically schedule a night off so I can do things like cook lunch for the rest of the week or do laundry or whatever house things need to be done.

That's why I only make things that I think will keep well, at least for a week. That way I can make it in the recommended size, and then have the added bonus of not having to cook again for another few days.

And that's where making a shit-ton of food that freezes well is a MIRACLE. Because then you don't have to cook every day, you can just make a big-ass lasagna or something and bam! you have dinner/lunch/whatever for a week. Actually, for that matter, Orvis is/was a similar company (and unsurprisingly, my dad's new fave). Their clothes these days are boring AF, but at least they're still well-made and not trashy.
