FWIW, depending on the grocery stores you go to, you can find some really great cuts of offal for really cheap. I recommend going to East Asian supermarkets or ones in Central/South American neighborhoods. It's still not nearly as much as what we /should/ be seeing, given how many animals are slaughtered for meat, but

Don't forget the butter, if someone forgot to boil it properly with the spices.

What would you say counts as overtipping? I always tip 20% on delivery (and eat-in)- should I be tipping more?
