Aviation autopilot really means altitude and heading hold. The pilot still has a ton of other duties and knows it. That is why they still scan for traffic and use the radios. Aviation systems do everything in their power to discourage pilot distractions.

People overriding controls in emergencies happens all of the time in aviation. We call the people doing it flight instructors and safety pilots. It also happens that aviation is much safer than crawling along the ground in a car.

It’s even easier than that. Everyone say they don’t want them and they will become standard equipment. That seems to be how it works it the auto industry.
