Much as I love Steven Universe now, part of me wishes I had it as a kid. I might be a better person now. Fruits Basket had a similar effect on me but Steven's really above and beyond in presenting such positive messages.

Kind of. The first quarter or so of the first season is a mixed bag of genuinely funny/touching episodes and just kind of passable kids' show adventures. It grows on you.
My guess is that Season 8 is going be something of a reset or revisioning and they're trying to get their shit together for promotion, which has kind of fallen by the wayside for season 7.
So Sardonyx is the Deadpool/Animal Man of the Steven Universe universe, able to see past the fourth wall.
