I'm using NoteBook by Circus Ponies on my Mac and I know they do have an iPad version. The Mac version knows the Cornell layout. From experience I know it is quite easy to make hierarchical notes.

No stupid. That there is more room to get hotter than to get colder can only be attributed to our relatively cold life, roughly only 293 degrees. Kelvin that is. Situation would be radically different if we were living say at 6 million degrees Reamur for example.
