I’ve been making my own mayo for about ten years, and I’ve never seen a recipe that says anything about cooking the eggs. The recipe I use (Alton Brown’s) does warn you about the risks of raw eggs, and it recommends you buy only fresh eggs/avoid contact with the shell, but it doesn’t instruct you to do any cooking.
