The age doesn’t really have anything to do with the sharpness. Aged cheddar usually just gets nuttier. And there is unaged extra sharp cheddar in every grocery store. I agree aged cheese will probably make it noticeably better, though.

You might be right, but tbh, I find the difference in flavor between “regular” cheddar and aged cheddar to be huge and quite obvious. I don’t think aged is necessary for this recipe or anything, but I think it would be noticeable even with the mayo.

I know some people aren’t great chefs and don’t know how to substitute some ingredients in recipes, but if we’re talking about expensive cheddar vs cheap cheddar, or expensive mayo vs cheap mayo, I don’t understand why it is an issue worth discussing.
