If people didnt want the carnage, then NASCAR wouldnt be marketing it (on TV previews, on their YouTube channel, etc.)  Maybe it's not all fans of racing, but an awful lot - I'd even say a sizable majority - seem to find it a major reason to tune in.

Another thing they could do is get rid of the “Over-time” Green, White, Checkered restarts, because nothing promotes crashing like restarting over and over again until there can be only one Highlander.
