I haven’t heard that perspective before, I thought they did it quite well, mentioning that Poe was the best several times, and then letting us actually see it, in what was genuinely my favourite shot of the whole film. (And this is coming from someone who thinks TFA is vastly overrated!)

Poe didn’t say he is the best, others did. Donald Trump says he is the best. I don’t understand why you are trying to draw a parallel between Poe’s skills and Trump’s arrogance.

By which you mean, they showed Wedge in the background of all three movies and then waited until someone wrote tie-in novels telling you at length he was the best pilot.

I could be dodgy on the details, but there’s no evidence in the film that Wedge is the best pilot. They certainly wrote him as the best leader of the X-Wing squadrons, but not necessarily their ace pilot. That he’s one of the best, if not the best, I feel is mostly from the EU, where it’s much more explicit.
