My office pizza fav lost their head chef - the owner said fuck it, sold to a local chain and closed. They kept some of the signature pizzas once reopened, but it has never been the same.

I believe that would be Capitalism. Eventually they run out of new markets\customers and the only way to increase revenues is to cut costs. Quality tanks, eventually the customers go elsewhere and the remains of the brand becomes fodder for someone's internet site or sign collector's junk pile.

You can't get a decent Chicken Fried Steak east of the Mississippi - i.e. where ever they call it "country fried steak" it's shit.

They used to have a baked Italian sub that was pretty good…. and you won't find one with a Space Invaders 2 cocktail table and jukebox anymore.

My experience is that hotel eateries tend towards over-priced meh. Ingredients and head chef intent are good, but the plates end up lacking. Captive clientele is probably the root cause.

When the Russians showed up front of house at our Indian lunch buffet, it was pretty clear that somebody's gambling habit had gotten out of control. The bust out didn't take long.

If you look closely at post-renewal neighborhoods, about the only thing left standing from the old days are the churches. At the start of the bust out, community services are pulled to run off the population, and the churches are bought off with land deals.
