My understanding is that he was, at least in part, trying to make a heckler stop talking. I do not think it was strictly him trying to open a dialogue with her about her supposed inability to distinguish between literal rape and jokes.

I certainly don't think it's unrealistic to have a person who eats some junk food not be fat. Of course thin people often eat some junk food. I'm just arguing that no, the show isn't blanket making fun of people with poor eating habits. They're only making fun of fat people with poor eating habits.

I guess I'm not seeing how just showing fat people to illustrate that Leslie is right and Paunchburger is wrong is tied into mocking racist murals. The murals are shown to be a bad thing, but the actual pictures of fat people are used to show her correctness.
I think Ron started out that way, but as his character became more popular and people latched onto his meat-loving side I do think it became portrayed as more of a positive sign of his manliness. He kind of stopped being satire and became practically aspirational.
Not to mention the show is not above a "headless fatty" photo parade. It's really awkward having them show pictures of bodies like Donna's to illustrate how misguided and gross everyone is. Except Donna? Presumably?
If it's just about mocking unenlightened diet choices, Leslie's (identical) choices wouldn't be an adorable quirk. It's about eating poorly AND being fat. If you aren't fat, unenlightened behavior is a fun sign of your boundless energy (Leslie) or masculinity (Ron).
One thing I've always wanted "Parks and Rec" to deal with was how Donna is portrayed compared to how they talk about anyone overweight who isn't a named character.
