the used pods also extract very well in alcohol. I use brandy in my baking quite a bit (biscotti, pound cake, etc), and some vanilla infused brandy adds another layer of vanilla complexity.
Also, it's fun to pop a few pods in a bottle of vodka. Makes for some awesome vanilla cokes.

Word. I just got off supermarket herbs and spices a few years ago, and looking back, it's as though my tongue had been laminated in plastic for several years. Everything is so much more flavorful when you use whole spices and toast and grind them yourself.
