I’d be interested to see how pork belly turns out. Long and slow cooking is great for all that fat, but I don’t know how low of a temperature you can cook at and still have that work out. I’d be curious to see the results. Pork belly is pretty cheap to buy at Costco too, so I have it around fairly often.
