I wouldn't say the GLI interior is really any cheaper then a base GTI interior. I have both a MK6 gti and a MK6 gli at my work- driven them both extensively. While it might not share body panels, the MK6 GLI uses the same suspension, same brakes, same engine, etc. The seats are very similar. All the parts we make fit

Other then the castings and the crank / camshafts, the V8, V10- are both made of the same parts. Which all come from a GTI basically. ;)

There is a good video on youtube of a guy digging out his R8 V10 and then proceeding to DD it through a blizzard to get some groceries. lol

The Jetta is not a4 sized. Park one beside a B8 chassis a4 and look. The a4 is like 6" longer and nearly 500 pounds heavier.

Don't fret- most of those cars you mentioned will be replaced by new, MQB chassis based variants in the US market soon. :)

Two engine ecu's is not that uncommon. Ferrari's from 360 modena v8 and up (that I'm aware of), 2x bosch me7 and later MED9 etc.

Audi R8 v10- 2 ecu's, along with it's flamborghini cousin, and so forth. It's how you build supercars out of regular car parts and minimize development work.
