In pickling, bay leaves impart crisp-keeping powers to my brined (salt; ‘sour’) cucumbers. No bay leaf = mushy pickles. More bay = firm/crunchy pickles. Protip: oak leaves work for this as well - if you don’t want to cheat and just use some pickle crisp (calcium chloride).
