Your position actually mirrors what early Christian mystics said of God. But here's where you get into trouble:
You can't claim anything about Him afterwards. You can't claim that He loves humanity (or any portion of it), for example. You couldn't even define what "love" in this context would mean. You can't say for

Your description of God places Him beyond all human understanding.
Which means we don't even know what we're talking about — The word God is a placeholder for a meaningless concept.
Arguing over whether He exists would be the next step, but we will never get there.
So... I'm going to sleep in again this Sunday.
