I would absolutely put Fatal Attraction on this list.  It kicked off a good 5 years of "the [blank] from hell" movies, such as the nanny from hell (Hand that Rocks the Cradle), the cop from hell (Unlawful Entry), and the roommate from hell (Single White Female).  I am sure there are many others.
