You could put them beside the road with a "FREE PAINT" sign. Maybe even post it on the Free section of Craigslist. A lot of crafters and artists will pick up leftover paint for crafting or painting murals.

Most applications are good about putting files under folders named after the application. So for example, if you delete an application called Plurka, look for a folder named Plurka.
Most apps, if they leave files behind, do so on the SD card. You can either get a file manager from the Market, or plug your phone up to your computer as USB/Mass Storage and delete them from there.
