Using it wired over a network with just the PS4 and the Vita TV have resulted in a worse remote play experience than Wifi over the same exact network. Thinking of returning the unit.

No. Remote play only shows what the PS4 is showing. It's a video stream that you can control, nothing more or less.

I don't think the games are being rendered at any higher resolution than on the Vita. It just outputs a 720p scaled signal. A game could be coded to run in 720p, I guess, but it's still just vanilla Vita hardware inside, subject to the same limitations.
