sometimes i make bacon more for the grease than the bacon (although that clearly does not go to waste). I also find when i cook it in the oven the liquid fat has less ‘junk’ in it, and I don’t worry about straining it.

I feel sorry for you folks down south who’ve been tricked into thinking the interior sucks. Weather here is much nicer than anywhere else in the state. The temp readings are colder but I guarantee it’s more comfortable :)
